I am planning on getting an Airbnb, renting a home, in Tokyo. what neighborhood would you recommend? I want close restaurants, stores and things to do.

The most convenient area as accommodation in Tokyo would be Shinjuku or Shibuya. There are tons of restaurants and convenience stores, also has multiple train lines so it's easy to go to anywhere.East of Tokyo has more traditional atmosphere such as Asakusa and Ueno if you prefer more atmosphere....

I would like to experience staying at a ryokan, Japanese traditional inns. You can experience to be in tatami mat room and sleep in a futon. What is the best district to stay in Tokyo?

I think Shinjuku is the best place to stay in Tokyo because the Shinjuku station is the central for wherever you want to go. There also many restaurants and covenience stores so you will never be inconvenience. The hotels are rather expensive in that area but there're reasonable ones if you resarch.
