I think the biggest difference of Japanese cuisine from Chinese and Vietnamese, while Chinese and Vietnamese use a lot of oil Japanese don't. Japanese cuisines don't have much variety of menu in frying and deep frying.

One major difference is that Japanese eat more fish and fish-related food more than beef, pork or chicken traditionally.
