Do I need to book the JR train from Tokyo to Hiroshima? Or I can just turn up at the station

Most of the time, you can just go to the station. Some peak periods like the end/start of the year, Golden Week and Obon are a few exceptions though. Plus you don't say if you are buying regular fare tickets or using a full JR Pass. If the latter, you can make seat reservations for free.

Hiroshima has a lot of great places to see - don't shortchange yourself like so many people do by just seeing the Peace Park and then leaving the city. The Shukkeien Garden is beautiful and the Mitakidera Temple is the secret jewel nobody ever sees.
