Okonomiyaki is a Japanese savoury pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning “what you like” or “what you want”, and yaki meaning “grilled” or “cooked”. Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan but is widely available throughout the country. 

Kansai Okonomiyaki (or Osaka okonomiyaki) is the predominant version of the dish, found throughout most of Japan. The batter is made of flour, grated nagaimo (a type of yam), water or dashi, eggs and shredded cabbage, and usually contains other ingredients such as green onion, meat (generally, thin pork belly, often mistaken for bacon), octopus, squid, shrimp, vegetables, konjac, mochi or cheese. You can check how to make Osaka Okonomiyaki here:

While Hiroshima Okonomiyaki the ingredients are layered rather than mixed. The layers are typically batter, cabbage, pork, and optional items such as squid, octopus, and cheese. Although the shop is quite small but it still has counter seats and table seats which equipped with teppan (Japan style grilled plates). Originated from the Kiji famous okonomiyaki restaurant in Osaka, now available in Tokyo. A full of fresh healthy shredded leeks on top well mixed with the crispy pork meat and noodles with a good deal of crunchy bean sprout.  You can watch them baking its raw Okonomiyaki on the iron plate until the surface changes its color to gold which is the perfect timing to cut it in half and start eating.  Perhaps, you may be able to taste both the spicy and the mild rich sauce pleasantly pasted below the mountain of leeks.

The famous Okonomiyaki restaurant “Hasshou” in Hiroshima opened their second store in Kyoudou, Tokyo. Hiroshima okonomiyaki has tons of cabbage inside. But it gets flat as being hit by a turner many times on teppan plate. Carp is obviously not new – it’s well-used and a bit greasy. But you’d be greasy too if your main feature was a griddle, and all your food was fried on it.
